The Food Standards Agency (FSA) has a public warning over the risks of acrylamide - a chemical compound that in some foods when they are cooked at high temperatures (above 120C). This means that people should avoid their roast potatoes, reject thin-crust pizzas and only easily toast their bread. But where is the evidence to support such advice? While studies have shown that acrylamide can cause neurological damage in mice, there is no evidence that it causes cancer in humans.
